You can use cow’s, goat’s, sheep’s or even camel’s milk. But we don’t recommend coconut or almond milk yogurt for tzatziki sauce. You can easily turn your homemade 24-hour yogurt made with animal milk into Greek yogurt. Have you ever wondered what makes “Greek” yogurt different from regular yogurt? If you let it drain for 30 minutes to 1 hour, you get the consistency of Greek yogurt. That’s why I like to combine these meatballs with yogurt and cooked, chilled rice.
